the kids of this house have not been eating well since exams revision began. yesterday night before prayer meeting, granny bear decided that everyone should eat a decent dinner. so these were the dishes served: Granny's Golden Coins (aka sweet potato croquettes), steamed pork mince, stir-fried bok choy with dried shrimps and egg sauce.
recipe for sweet potato croquette to follow...
boil cubes of sweet potato
mash it up when boiled till soft
add salt and coarse black pepper
mix it up, shape into balls/ patties
dip in beaten egg, coat with plain flour followed by japanese bread crumbs (panko)
deep fry/ pan fry in hot oil.
and there you have it! golden croquettes that is soft on the inside and crunchy on the outside!
really simple to make. just be careful with the temperature of the oil when frying it. make sure oil is not too hot or the croquettes will not be a beautiful golden brown! and next time, i'm going to experiment with wrapping gravy filled beef mince inside.hahaha!
