in the aftermath of the exams storm, the household of the four happy bears was in for a many lovely surprises and joyous occassions. to mark these memories, granny bear decided to bake a cheesecake for:
A) june's belated birthday celebration
B) olivia and su's farewell
C) jon poh's welcome "party" (though he brought a cheesecake himself, which has a lovely music note on it to say hello to june bear and baby bear!)
and so here it is, the recipe for the cheesecake that took 3 hours to bake all because granny bear was lazy and used the electric blender instead of the electric mixer! sigh!
1) firstly, prepare the biscuit crust with 250g of digestive biscuits (or any other sweet biscuits to your liking) and 125g of melted butter. Mix the crushed biscuit with the melted butter. Press the crumbs into a 8 or 9 inch springform cake tin and cover the sides if you desire.
3) Add in 2 eggs and mix till blended. Stir in 300g of blueberries (for those who prefer sweet berries) or mixed berries (only for those who like the tart sweetness of berries)
4) Pour mixture into the prepared crust and bake for 175 degree celcius for 40 minutes till centre is almost set.
5) Cool with oven door kept slightly ajar for about 30 minutes to 1 hour.
6) Refrigerate. Decorate with fresh fruits before serving. Go crazy with decadence by melting some white or dark chocolate over a water bath and drizzle over the top of the cake!
