hmmm...sorry for the lack of updates my lovely friends!the home of the happy bears has been really busy lately with the entertaining of guests from faraway land amidst er-hem...other important issues too...*wink wink* (some of you will know what i'm referring to but for those of you who are clueless...eh?too bad!hahaha...just kidding!) and so as you can guess, we haven't really had time to cook or bake much...
but since the next few days will be even more packed with activities, granny bear thought that it's time to put up a way overdue post about the "unforgettable" pumpkin scones that she had promised to a friend( haha... i hope you are taking notes of the recipe now johann!)
PUMPKIN SCONES
INGREDIENTS:
-30g butter chopped
-2 TB castor sugar
-1/2 cup mashed cooked pumpkin
-1 egg (lightly beaten)
-1/2 cup milk
-2 and 1/2 cup self-raising flour
-pinch of salt
-milk to glaze
STEPS:
1) Preheat oven to 210 degree celcius
2) Using electric beaters, beat butter (work on it when softened to make things easier!) and sugar in a SMALL mixing bowl ( don't use big bowls!you won't get fluffy scones if you use the big bowls!!!) until mixture is light and creamy
3) Add mashed pumpkin, beaten egg and milk. Stir/ mix till well combined.
4) Sift flour and salt into large mixing bowl ( don't be lazy about sifting!it helps to remove lumps from the flour!)
5) Make a well in the centre and add almost all the mashed pumpkin mixture from 3)
6) Mix LIGHTLY using a flat bladed knife to form a soft dough (add more liquid if necessary)
7) Knead dough briefly on a lightly floured surface and roll dough out to about 2cm thick
8) Separate dough into smaller rounds/ portions in the size and shape according to your heart's desire! (note that dough might be super soft and sticky so you would need to flour your hands thoroughly before working on dough so that there won't be more dough on your fingers than on the baking tray!!!) oh and also! granny bear's advice is to make heart shaped scones if you can so that people will feel the LOVE when they eat the scones! hahaha...granny's number one obsession is heart shaped items!
9) Next place separated dough portions on greased/lined baking tray and glaze with milk. Bake for 10 to 12 minutes and remember to watch your oven closely so that the scones will be soft and fluffy and not rock hard! if you can't afford time to watch over your oven, turn the temperature down abit to say around 190 degrees celcius...though it takes longer time to cook, it will buy you more time to do other stuff before your scones get burnt!
OK???good luck with scones baking!hope they turn up to be yum so that poor cinderella who donated her pumpkin carriage for them won't feel too sad!
