estee's birthday dinner!

4th of july is a day of significance to america because it's her independence day. but in the house of the happy bears, there's a whole new meaning to this day because it is the birthday of our dear friend, estee. she is a really loyal and good friend who is fun to talk to and be with. so in honour of her, granny bear decided to hold a small dinner party at our place so that she can enjoy the love from a home-cooked meal.

here's what was cooked that night...but alas! no picture of the birthday girl because the camera died before anymore pictures could be taken...but a birthday cake picture with estee in it will soon follow i hope....
mmm...sweet and sour pork! i pre-marinated the pork cubes a night before with sugar, soy sauce, salt, some cooking wine, white pepper and 5-spice powder for the extra bit of fragrance in the meat. the 5-spice powder really works wonder with pork as i i have discovered! mapo tofu! this is estee's favourite and therefore a must-have at the dinner! it may look spicy but i can assure you that it's bearable spiciness! even wally who is known for his non-tolerance of spicy food could take it! the trick to it is to add a little cooking wine and small amount of sugar whilst cooking. and if you want a nicer presentation of the food, do cube the tofu before cooking instead of chopping it up with the spatula whilst cooking! haha...i did that only because i was hard-pressed for time!
and my very own creation! treasures in a blanket! the filling is made from minced fish fillet with ginger, mashed hard tofu, fried shredded dried scallops, shredded chinese mushrooms and carrots and after that wrapped within softened cabbage leaves tied up with garlic chives stalks! following that, steam the parcel for about 30 minutes. make egg drop sauce with minced garlic, "juice" from steaming, beaten egg, oyster sauce and cornstarch water then drizzle over!

and the most versatile thing about this dish is that the leftover fillings can be used to make fried tofu balls. just shape the remaining fillings into small little balls, coat with potato flour and pan-fry/deep-fry for about 10minutes (thoroughly!!!) it's really yum! do try it!
